He was knighted by the King of England.When he died, two huge volumes containing 1,466 pages were required to tell the story of his life.His name was Sir William Osier. Here are the twenty-one words that he read in the spring of 1871-twenty-one words from Thomas Carlyle that helped him lead a life free from worry: "Our mainbusiness is not to see what lies dimly at a distance, but to do what lies clearly at hand."Forty-two years later, on a soft spring night when the tulips were blooming on the campus, this man,Sir William Osier, addressed the students of Yale University. He told those Yale students that a manlike himself who had been a professor in four universities and had written a popular book wassupposed to have "brains of a special quality". He declared that that was untrue. He said that hisintimate friends knew that his brains were "of the most mediocre character".What, then, was the secret of his success? He stated that it was owing to what he called living in "daytightcompartments." What did he mean by that?

How to Prepare Artichokes and Shrimp Dip

8 whole artichokes
¼ cup olive oil
¼ cup lemon juice
2 tsp. salt
1 tsp. rosemary
2 4½ oz. cans shrimp
3/4 cup mayonnaise
2 tbs.. dijon mustard
2 tsp. tarragon
1 bay leaf
¼ tsp. pepper
1 tsp. Worcestershire sauce
½ cup onion, minced


Steps:-

1. Wash and trim artichokes leaves. Cook artichokes in boilingwater. About 1 inch deep. Add to the water lemon juice, salt,pepper, bay leaf, tarragon and rosemary. Cook for about 45minutes or until leaves pull off easily.

2. To make shrimp sauce you add mayonnaise, mustard,Worcestershire sauce, onions and shrimp. Mix all ingredientswell.

3. Place shrimp dip in ramekins and artichokes on one plate each.Makes nice appetizer or first course.....

How to Prepare Basic Polenta

- 9 Cups Water
- 1 Teaspoon Salt
- 3 Cups Cornmeal; coarse−grain

Bring water to a boil in a large heavy pot. Add salt and reduce heat untilwater is simmering. Take cornmeal by the handful and add to water veryslowly, controlling the flow to a thin stream through your fingers. To avoidlumps, stir quickly with a long handled wooden spoon while adding cornmeal.If necessary, stop adding cornmeal from time to time and beat mixturevigorously. Cook, stirring constantly, 20 to 30 minutes. Polenta will becomevery thick while cooking. It is done when it comes away cleanly from thesides of the pot. Pour polenta into a large wooden board or a large platter.Wet your hands and smooth out polenta evenly, about 2 inches thick. Let cool5 to 10 minutes or until polenta solidifies. Cut cooled polenta into slices1 inch wide and 6 inches long. Place slices in individual dishes. Serve hot,covered with your favorite sauce. Makes 6 to 8 servings.Variation: Fried Polenta (Polenta Fritta): Prepare polenta and let coolcompletely. Cut cooled polenta into slices 2 inches wide and 6 inches long.Pour oil about 1 inch deep in a large skillet. Heat oil until a 1−inch cubeof bread turns golden almost immediately. Fry polenta slices on both sidesuntil light golden. Drain on paper towels. Serve hot. It is importent toinsure the oil is hot enough, otherwise the polenta will absorb oil and yourpolenta will be greasy and unpalatable.....
